A recent research publication concluded that low UVB exposure and high animal protein intake are associated with an increase in renal cancer. The researchers conclude that the low UVB causes low Vitamin D levels. Here we are again with another study showing that low Vitamin D has a hand in many illnesses. Sunshine is our friend.
The high animal protein intake is probably very true, but it isn’t the animal protein per se that is causing the increased cancer risk. It is the way the animal products are prepared. Cooking animal proteins at a high heat causes the production of heterocyclic amines which is a known carcinogen. The best way to eat meat is raw. Many people feel that if we only ate raw meat then we wouldn’t see the correlation with animal proteins and increased cancer risk. We may actually see an inverse correlation since the sulfated proteins are important for liver detoxification. However I’ve eaten raw meat and I’m not too psyched to do it again. Can you say E Coli? So what can one do? Poach your meat or cook at a low temperature to reduce the development of the carcinogenic heterocyclic amines.
